Ultimate Lamb Burger & Rosewater Rhubarb Eton Mess



This Ultimate Lamb Burger and a Rosewater Rhubarb Eton Mess are the perfect way to enjoy a mix of sweet and savory flavors. This meal will please all of your taste buds.

Ingredients:

  • 1 lb ground lamb
  • 1/2 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 4 burger buns
  • 4 slices feta cheese
  • 1/4 cup tzatziki sauce
  • 1 cup fresh rhubarb, chopped
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 tsp rosewater
  • 2 cups whipped cream
  • 1 cup crushed meringue cookies
  • Fresh mint leaves for garnish

Instructions:

In a mixing bowl, combine ground lamb, chopped red onion, minced garlic, ground cumin, ground coriander, paprika, salt, and pepper

Mix well

Form the lamb mixture into 4 patties and grill them over medium-high heat for about 4-5 minutes per side, or until desired doneness is reached

During the last minute of grilling, add a slice of feta cheese to each patty and let it melt

Toast the burger buns on the grill until lightly browned

Spread tzatziki sauce on the bottom half of each bun

Place the lamb patty with melted feta on top of the tzatziki sauce

For the Rosewater Rhubarb Eton Mess, in a saucepan, combine chopped rhubarb, granulated sugar, and water

Cook over medium heat until rhubarb is soft and the mixture thickens

Stir in rosewater and let it cool

In serving glasses, layer whipped cream, crushed meringue cookies, and the rhubarb compote

Repeat the layers and garnish with fresh mint leaves
