Cajun Perch Po'Boy Sandwich



Experience the bold flavors of Cajun cuisine with this delicious Perch Po'Boy Sandwich. Crispy fried perch fillets seasoned with Cajun spices are nestled in a toasted baguette with fresh vegetables and spicy mayo, creating a mouthwatering sandwich that's perfect for lunch or dinner.

Ingredients:

  • 4 perch fillets
  • 1 cup cornmeal
  • 1 tablespoon Cajun seasoning
  • 1/2 cup mayonnaise
  • 2 tablespoons hot sauce
  • 4 French baguettes, sliced and toasted
  • 2 cups shredded lettuce
  • 2 tomatoes, sliced
  • 4 dill pickle spears
  • Salt and pepper to taste
  • Oil for frying

Instructions:

In a shallow dish, mix cornmeal and Cajun seasoning

Season perch fillets with salt and pepper

Dredge perch fillets in cornmeal mixture until coated evenly

In a skillet, heat oil over medium-high heat

Fry perch fillets until golden brown and cooked through, about 3-4 minutes per side

In a small bowl, mix mayonnaise and hot sauce to make spicy mayo

Spread spicy mayo on toasted baguette slices
