Cajun Perch Po'Boy Sandwich

Ingredients:

  • 4 perch fillets
  • 1 cup cornmeal
  • 1 tablespoon Cajun seasoning
  • 1/2 cup mayonnaise
  • 2 tablespoons hot sauce
  • 4 French baguettes, sliced and toasted
  • 2 cups shredded lettuce
  • 2 tomatoes, sliced
  • 4 dill pickle spears
  • Salt and pepper to taste

Instructions:

In a shallow dish, mix cornmeal and Cajun seasoning
